Orange Cookies
- ½ cup (1 stick, 113g) butter softened
- ¾ cup (150g) granulated sugar
- ½ cup (85g) plain yogurt greek, regular, or dairy-free
- 1 large egg at room temperature
- 2 ½ cups (300g) all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¼ cup (60ml) orange juice freshly squeezed
- 2 teaspoons orange zest
Orange Icing for Cookies
- 1 cup powdered sugar
- 2-3 tablespoons orange juice freshly squeezed
- 2 teaspoons orange zest optional
Instructions
- Preheat the oven to 350°F/180°C, and line a cookie sheet with silpat or parchment paper.
- In a large bowl using a hand mixer, cream the butter with sugar until smooth.
- Add yogurt and egg and beat again for 30 seconds. The mixture won’t be very smooth and that’s ok.
- Add the dry ingredients and mix until just combined.
- Add the orange juice and zest, and mix again. The cookie dough will be soft and a bit wet.
- Use a medium cookie scoop (2 tablespoons), scoop out cookie balls and bake for 12-14 minutes. The cookies are done when they’re lightly browned at the bottom.
- Remove from the oven, and allow to cool on the cookie sheet for 5 minutes, then transfer to a wire rack to cool completely.
- To make the icing, add powdered sugar to a bowl, then gradually add the orange juice and zest if using and mix until you reach the desired consistency.
- Spoon the icing over the cookies, and it will spread and cover the cookies (do this on a wire rack). Garnish with extra orange zest before the icing sets.
Notes
- To get the amount of fresh orange juice and orange zest that you need for this recipe, you'll need at least two medium to large oranges. To be safe, I'd probably buy three.
- Don't be alarmed if your cookie dough seems soft, wet, or sticky. This is how it's supposed to be. If the dough is so loose that it won't hold a ball shape, you may need to add a bit of flour
- Store Orange Cookies in an airtight container at room temperature for up to 4 days. Place wax paper or parchment paper between layers as needed.
- Make Ahead: You can make the Orange Cookie dough up to 48 hours ahead of time if you like. Before baking, allow the dough to sit out at room temperature for 20-30 minutes.
- To Freeze: Fully baked and iced orange cookies can be frozen by placing them on a baking sheet and freezing until completely solid. Then transfer the frozen cookies to an airtight container, separating layers with wax paper or parchment paper. Freeze cookies for up to three months.
