Ingredients
- 1 pound boneless pork loin chops cut into 1/2-inch cubes
- 2 tablespoons cooking oil
- 2 tablespoons sesame oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground ginger
- 1 1/2 cups frozen peas and carrots
- 2 tablespoons minced garlic
- 4 large eggs beaten
- 1/2 cup green onions chopped
- 4 cups cooked rice
- 1/4 cup soy sauce (regular or low sodium)
Instructions
- Heat a large skillet or wok over medium-high heat and add cooking oil and sesame oil.
- Once heated, add the pork cubes and season with salt, pepper, and ginger. Sauté and cook for 5-7 minutes.
- Reduce the heat to low, remove the pork from the skillet and set aside. Add the peas and carrots and sauté for about 2 minutes.
- Add the minced garlic and sauté for about 1 minute.
- Move the vegetables to the side and pour in the beaten eggs. Cook alongside the vegetables.
- Lower the heat to medium-low and add the cooked pork, rice, and green onions. Stir carefully to combine.
- Drizzle with soy sauce and heat thoroughly.
- Serve hot and enjoy!
