Crock pot Tomato Soup
4 cups chicken stock
28 Oz can tomato purée
2 tbsp tomato paste
1 tsp basil,
1 tsp oregano
1 tsp salt
1 tsp black pepper
1 tsp sugar
2 tbsp butter
1 cup heavy cream
Add all ingredients to a slow cooker except for the cream and butter
Cook on low 4-6 hours
After cooking add the butter and cream
Garnish with fresh basil or parsley
If you have leftovers, make tortellini soup.
Heat the leftover tomato soup in a pot, add cooked Italian sausage, tortellini and spinach. Top with parmesan cheese.
